Sweet, savory and nutty Thai Chicken with Noodles Recipe

Or use it to make Thai Chicken Pizza!

This can be made as a noodle dish, and I have also marinated chicken like this, cooked, chopped and used to make Thai chicken pizza w/white garlic sauce, red onion, cilantro and peanuts… it’s amazing!

  • 1/2 c olive oil
  • 1 t sesame oil
  • 3 T soy sauce
  • 1/3 c rice vinegar
  • 2 green onions, chopped
  • 1 jalapeno, chopped
  • 4 cloves garlic, minced
  • 2 t fresh lime juice
  • 2 t crushed red pepper flakes
  • 1/4 t Tabasco
  • 1/4 t white pepper
  • 2 chicken breasts, cut into strips
  • 1/2 lb spinach linguine
  • 1/2 lb regular linguine
  • 3/4 lb fresh asparagus, steamed 2-3 minutes, tender crisp and cut
  • diagonally.
  • 1/4 t salt
  • 1/2 c fresh cilantro
  • Cooked pasta of your choice

In small saucepan, combine marinade ingredients. Place the chicken in a bowl 3 T marinade, 20-30 minutes. Sauté chicken 7-10 minutes. Warm remaining marinade.

Meanwhile, arrange past in bowl, toss with 1T warmed marinade. Spread chicken over top of the pasta, top with asparagus. Garnish with cilantro (I also use chopped peanuts). Accompany with remaining warmed marinade.
